Haitian cake has a light and fluffy texture.  It usually has less sugar (even though it is not a low calorie dessert) than traditional American cake.  While there is no rhum added to the Monayiti Baking mixes, we strongly suggest you add a few tablespoon of rhum, preferably Barbancourt, to get the authentic flavor of Haitian cake. The baking process help the alcohol to eveporate leaving the unique aroma of the rhum.
